I have a 5 gal full boil extract wlp029 Kolsch sitting in a 34*f fridge for the last 5 weeks. Will I have enough yeast in suspension to properly carbonate when I prime and bottle? A fellow HBer advised to hedge my bet and use carb tabs/drops just in case but I'd rather not.

It should be ok, but if you're worried add some yeast at bottling time. Carb tabs won't make a difference they don't contain yeast they're just sugar.

Thanks I'll bottle as usual. I guess at the worst case scenario they might take a bit longer to finish.

No, the worst case scenario is that your beer won't carbonate at all and it will be flat. That being said, a couple weeks of very cool temps won't kill your yeast. There should be plenty of yeast around to do the carbonating you need. Just move the bottles to a warm area (68-75F) for a couple of weeks and it should be fine.

Cheers. :mug:

Idk...34F for 5 weeks sounds a bit too long to me?

He could certainly hedge his bet and add a little yeast at bottling time. What none of us asked was the OG and FG of the beer. A big beer that attenuated way down might just have exhausted the yeast. (A thought that didn't occur to me until reading your post.)

Will warming her up before bottling help?

If it was my beer, I'd add about 1/3 package of dry yeast to the cooled priming solution in the bottling bucket and stir that in. Then I'd rack the beer into it.

It might not strictly need more yeast, but a little bit of fresh yeast will ensure carbonation. It can't hurt, and may be needed.

I guess I'll sprinkle in a lil US-05 to be safe. That should be neutral enough. I'll also bottle a couple without just to see the results. Will post findings. Thanks all.

Quick update. I ended up sprinkling ~half a pack of dry cbc-1 into bucket bottling day along w priming sugar. Just tested one sitting at 70f for 10 days and turned out great.
