Beef back ribs this weekend 
Got a full packer a little while back, separated the point from the flat, corned both, cooked the point as is and the flat went into the smoker to make pastrami, wrapped it at 160f now waiting for it to get to 203f.
And a pic of the regular corned beef as well, cause why not. Don't wanna talk about my first cut, realized after that I went with the grain, and I'm not even drinking...

Jerky is in the smoker, first check after about 2 hours. I sliced a bit thicker this time. Gonna need a few more hours and maybe the dehydrator over night.

Final product of the pastrami posted above, good batch, Maybe more black pepper next time, the last one I did the pepper was a bit much, and I love pepper, this one not enough, gotta find that sweet spot. Definitely happy in any case. Got several pounds, didn't weigh it but I'd guess 6 or 7lb.
Getting in a smoking/grilling rut... Ribs and meatloaf, meatloaf and ribs.

Yeah, but smoked meatloaf is so freakin good. I've been there though, smoke the same couple things over and over, gotta switch it up.
How about some beef cheeks?!? I pulled out the 7# pack to thaw...
I’ve avoided this hobby because I don’t need another rabbit hole to fall down. Well, yesterday I found an old Traeger (lil Tex?) at a garage sale for free. Needless to say, yep another hobby. I started simple with pork ribs. Wife loved them and I’m hooked. I’ve long made fun of my pellet smoking friends for “cheating” but i guess im one of those cheaters now.
I know how you feel! My brother got me an 18" Weber kettle for Christmas two years ago after he began grilling. I was 56 and almost never grilled but now I do 4-6 times a month. Happy with the results and I'm still digging through that rabbits hole lol
A couple venison backstrap tonight, it's nice to smoke something that doesn't take all day. About an hour and a half at 225f to 135f internal.. freakin perfect.
The backstrap posted above was smoked while snowing... but I cheated and had it sitting at the edge of my garage with the door open.
Nope. Not grilling in the snow.
Almost pulled the trigger on this bad boy! When I looked at it though it was waaaayyy bigger than I thought (it's the PBX, for Xtra large) and I don't know if I will need that much space... But the price is excellent 
... Welp, I stewed on it overnight and made the purchase this morning!! Too good to pass up. Going to pick it up soon

The snow began falling right at the end of my chicken smoke. 5 or 6 inches fell overnight
Making some baby back ribs, baked beans, and potatoes in foil. Got to love the room on this 26" weber.
They are, I did the "test" of them from the thread here on hbt. They worked great, and used them again tonight on a 3lb venison meatloaf, smoked for an hour and finished in the oven. Oh and it's stuffed with provolone.
Plan on getting some frozen wings from Costco Sat and smoking Sunday for the game.
Going to get some eye round for jerky too as well. Pics to cone Sunday.

I love my smoker and smoked meats. However, for the big game, I have to go with traditional buffalo wings.
I’ll get out my camp stove and fry them on the patio. It’s a small mess to deal with after but worth it.

4 racks of back ribs in the Green Egg for my wife's birthday party this afternoon. I'm using pecan from our son's house in Texas.
The weather is bizarre. We've had over a week of 80F temperatures, normally highs should be around 59F.

No pics, but i decided to ribs today as well. Picked an eye round roast up as well so sliced it up and have it marinating for jerky to smoke before the wings...
Weather is not to cold so I am getting the most out it this weekend.

Not so much smoking, but grilling tri tip tonight, and I cured 10+ lbs of pork belly for bacon.
No pics of the wings, I got them started late and was serving right at kick off, but they were great!

Man, I love white gas stoves and lanterns. I have propane stuff too, but for pure btu’s, white gas rules.
Iirc this model is from the mid ‘60’s and it lights up within a min and purrs like a kitten.
I agree. I have the same one. It's been handed down a couple times and it's in great shape.
