Got a full packer a little while back, separated the point from the flat, corned both, cooked the point as is and the flat went into the smoker to make pastrami, wrapped it at 160f now waiting for it to get to 203f.

And a pic of the regular corned beef as well, cause why not. Don't wanna talk about my first cut, realized after that I went with the grain, and I'm not even drinking...

Final product of the pastrami posted above, good batch, Maybe more black pepper next time, the last one I did the pepper was a bit much, and I love pepper, this one not enough, gotta find that sweet spot. Definitely happy in any case. Got several pounds, didn't weigh it but I'd guess 6 or 7lb.

I’ve avoided this hobby because I don’t need another rabbit hole to fall down. Well, yesterday I found an old Traeger (lil Tex?) at a garage sale for free. Needless to say, yep another hobby. I started simple with pork ribs. Wife loved them and I’m hooked. I’ve long made fun of my pellet smoking friends for “cheating” but i guess im one of those cheaters now.

I know how you feel! My brother got me an 18" Weber kettle for Christmas two years ago after he began grilling. I was 56 and almost never grilled but now I do 4-6 times a month. Happy with the results and I'm still digging through that rabbits hole lol
