First attempt at an all-grain brew with a hefeweizen. For the most part everything was going normal until we noticed these bubbles atop the beer after a few weeks of fermentation. We did hydrometer readings earlier in the week and confirmed that fermentation had ended, but did not get around to bottling until today when we noticed these. Perhaps it became infected when we took the readings? Should we dump it? Proceed with bottling and let it age?

Looks like its infected to me. Time to think about making a good sour out of it. Or rack underneath bottle and drink her quick.

Is there a way to salvage this? Proceed with bottling and let it sit for a few months? Does it have to remain in the carboy?

If you don't want to make it into a sour bottle asap if its done fermenting. Rack underneath leaving the top layer. You want to let sit at 70 degrees for three weeks in a closet in bottle After throw them in the fridge for a week and then drink them fast. Hopefully it will taste ok. The infection will take hold overtime so like i said drink them sooner than later. Good luck.
