where did my beer go????

finally bottling my bier de chute, which originated on 10/18 and lagered since 11/7....

and i barely got 4 gallons out of the batch

i guess i need to account for evaporation next time?

also, am I going to be screwed with over carbonated beer?, i pulled up a bit on the sugar water, but probably put almost 5oz of sugar into the bucket.

No, I only got 4 gallons out of my first two batches and I didn't get any bottle bombs. You should be ok

You should start your boil with about 6 gallons and have 5.25-5.5 gallons into the fermenter.

i would not think you'll have to worry about bottle bombs. an extra oz of corn sugar in 4 gallons wont do it.
