I have a lager at the end of primary, i'm now doing a diacetyl rest. I try to find the best time to harvest the yeast to reuse.
I've read that somes leave in primary vessel and go on with lagering, harvest at the end of the whole process. Others transfer to secondary and harvest then. Others harvest the krausen/foam from active fermentation.
So what's the best way?
