Hey all, I was wondering if you could give me some advice. I'm making a high brid wheat beer and i was going to use one part dark malt extract and one part wheat malt extract as the fermenting sugars. I've already used the LME and was impressed by it. The beer i'm making is a dunkelweise, hence the DME. I guess my question relates to the wheat malt extract and what effect (if any) it will have on my beer?
 
Typically the wheat spray malt is 55% wheat/45% barley. It's got more protein than standard all barley malt extract but it'll ferment out fine. The only effects it should have are a wheaty flavor and some haze in the beer.
