Planning to do a 100% wheat beer this weekend and it got me thinking about SMM content of wheat malt and how long I need to boil to drive off DMS production. Does anyone know if wheat malt contains more or less SMM than barley?
 
I don't know the SMM content of wheat malt, but in general, the lighter the SRM, the higher its SMM content.
 
The maltster tunes the malt for the level he wants. If he wants high levels he'll malt a variety of barley that contains a lot of it, use or avoid certain chemicals and kiln lightly. I think you'd have to look at the malt spec sheets to be sure.
