I'm looking to do a wheat beer and come up with a recipe based on some ingredients I have. I have:
50lb of 2-row malt and 50lb of white wheat malt along with us-04 and 05.

Any thoughts of how I could use those as a base for a wheat beer and then add specialty grains as needed?

Agree with skeezer. Pick up some Amarillo and you have the makings for a great American Wheat. One of my favorite beers. My take on it is just a little different than the brew365 recipe. I sub flaked rye for the caravienne and hop it a bit more aggressively to get it up around 45+ IBU. I also add in a little Simcoe at a 1:2 ratio to the Amarillo. The piney, woodsy character is a nice compliment to Amarillo's citrus flavors and aroma. The -05 that you have is a good clean yeast for this style. The dry version of the WLP001 suggested in skeezer's link.

Good luck!
What ever you decide, it'll be a fine beer.

Hey, just noticed we're both from Stockton.
Just different coasts.

I actually had the Gumball head wheat in mind and since I bought bulk of 2-row and wheat I was trying to figure out what else to make. I made 5 gallons of Gumball head and it was gone within a week so this time I'm doing ten gallons.

If you had it and liked it, I suggest Lagunitas Little Sumpin Sumpin. Its higher alcohol (7.2% or so). There is a recipe up here somewhere. You could probably change the hop bill to reduce the varieties and still make a stellar wheat/IPA.
