I brewed a pale ale 1 week ago. It fermented vigorously for a day or two then slowed down for a couple days. I added hops on day 6. I no longer see any activity in the air lock. The kit instructions say bottle after 10-14 days. Just curious as to what's happening now that fermentation appears to have stopped. I checked the SG today and it is where it should be after fermentation is complete. I will probably bottle on day 12.

I'm sure someone will give you the details, but in short, fermentation leaves unwanted byproducts that the yeast will clear out of the beer so it is good to let it sit on the yeast for an extra week or two to let that process occur.

Yes, letting it sit on the yeast will clear up diacetyl and other fermentation off flavours. It will also allow your beer to clear.
