I'm curious as to what yeast(s) will yield a sweeter (and probably less alcoholic) cider? I'm only accustomed to commercial types like Hornsby's which is pretty sweet and in the ballpark of what I'm looking for in a homebrew cider.

Sweet mead yeast perhaps?

Thanks for the quick answers.

As for using ale yeast, I'm actually brewing a couple gallons of juice with 3/4 pound brown sugar and s-05 ale yeast right now, which is one yeast that the guy rec'd.

I sampled it today and it tastes great right but its only a couple days into fermentation, so I don't know how dry it will go yet. Can't wait to find out. It really did taste awesome at this point; sweet, slightly alcoholic, and with a healthy bit of a butter rum/caramalized flavor from the brown sugar.
