Made this IPA which is basically straight out of Brewing Classic Styles. It doesn't call for any dry hop, but I want to add some. I have Cascade, Amarillo, and Centennial available. I'm leaning toward an oz of Amarillo. What do you think?

Why not use all 3? I just made a clone of Green Flash IPA that uses 4 dry hops: Cascade, Columbus, Centennial and Amarillo and it is fantastic!
 
Any of those three are good for dryhopping, but I'd concur with those above me: they blend nicely too :). Maybe compromise and just drop .5oz of each of them; for a standard IPA that should produce an excellent aroma.

Another +1. However cascade dry hopping gets real grassy to me, So I would axe the cascade or use small amount if it were me.
