I'm doing a spiced Wit monday and I don't have the right hops.

Here is what I do have to use.
4oz Perle
4oz Willamette
1.5oz EKG
1oz Hallertau

I was thinking of something like this. (note: this is a 12 gallon batch)

2 lbs Rice Hulls
8 lbs Pale Malt (2 Row) Bel
6 lbs Wheat Malt, Bel
4 lbs Wheat, Flaked
1 lbs Aromatic Malt
8.0 oz Oats, Flaked
1.50 oz Goldings, East Kent - leaf [6.30 %] (60 min)
1.00 oz Hallertauer leaf [4.10 %] (45 min)
0.25 oz Cumin Seed (Boil 5.0 min)
0.50 oz Orange Peel, Bitter (Boil 15.0 min)
1.50 oz Coriander Seed (Boil 15.0 min)
2.40 tbsp PH 5.2 Stabilizer (Mash 60.0 min)
2 Pkgs Belgian Wit Ale (White Labs #WLP400) [Starter 400 ml] Yeast-Wheat

Should I stick with that or would the Willamette or Perle be better?
(I did not have those two hops when I made the recipe)

Sine EKG is hard to find, you might want to use some of the Willamette. I'd save the EKG for use as an aroma hop.

Use the Hallertau.
I don't have enough of that one hop so I have to mix them to get the IBU's right.

That's one thing I was thinking.
The info I found on the Perle was that they were basicly a Hallertau. So that made me think that maybe the mixing some of the Perle would be the way to go. But then again I have seen some Wit recipes call for Willamette.
12 gallons is a lot to F***k up. :D
