So I have My first Hefe in Primary for 4 days at 68º. Most activity of bubbler was day 2 and 3. I plan to rack to secondary for 7 days before bottling. What temp should I set it for. Brewsmith shows 68º. I thought hefe's were fermented lower - not sure.
BTW, I used 3/4 packet of WB-06 yeast, unhydrated.

You can keep it at this temperature or, even better, cool it down to around 50 *F and let it mature a little at this temperature.

OK, So rack to secondary and go to 50º for another 7 days? Should I slowly go down to that temp or does it matter?

I usually Bottle condition in my garage, which is now running from 60º overnight to 70º late afternoon. Is this OK for for a hefe or should I refrigerate at 40º?
