Why smoke a brisket of course! Hours away, but damn I'm hungry:

Looks great Brian. I have yet to do a brisket, but it's on my list of future smoked meats. Last week I did a bunch of turkey legs in my gas smoker, they were damned good. Today, it's going to be burgers and dogs.
 
nice I am making brisket tonight for sunday eats.

what cooking technique are you using?

I cant decide if it will be slow and low overnight or a med/high heat cook on sunday
 
I'm cooking with more of a medium heat. Should be done in about 5 - 6 hours or so. Dry rubbed last night and using a vinegar/beer mop sauce once an hour. Hickory smoked.
 
Can I have some? I'm REAL hungry!!!! LOL. Looks great, I need to fire up my grill! Maybe next wknd. I'll have a few people over and grill out! I'm inspired by your pics!!:rockin:
