Nothing too exciting, just simple home cooking. Roasted chicken, mash with gravy and there was also a cabbage/kale side salad.
 
Merry, tell me what you like for your salad - I bought a mix of kale and cabbage and broccoli slaw, looking for good ideas!
Oh a ginger dressing or balsamic vinaigrette would be my choice on that blend. Actually, I’ve been getting bagged salads from Lidl a lot like Dole and less expensive, and each bag is enough for the both of us to have a full bowl. I used the Asian blend yesterday green and red cabbage, kale carrots and green onions. I frequently top it off with cucumber and tomato. They come with a little bag of dressing and toppings. Asian has Chinese fried noodles and sliced almonds. It’s quick and easy a decent salad for 2 and just $3, a head of cabbage is 1.69 a pound right now. So I can be lazy and save money. 😉

Mmmmmmm curries! I need to learn to make more of them. I make a mean Butter Chicken, pork Vindaloo, and saag paneer, and my favorite is Panang Curry. If you ever feel like sharing the ones you like, Corky, I'd love to copy them off and try them!

That would be just dandy with me, it's the way I cook! Never met a recipe I couldn't tweak and seldom cook one without tweaking one way or another. So, whenever you have the time/inclination fire away! And thank you in advance.
 
Yes that is a graniteware roaster. It lives in my oven. Ha Ha! I have to take it out eveytime I want to bake/broil. Doesn't get used to often. Just the occaisional spiral ham or large batch of Golumpki.
 
One of my DILs made us a fabulous dinner featuring a roasted beef tenderloin in a red wine reduction (whole bottle simmered down to about a cup) and some rosemary sprinkles with this cheese/potato disk concoction that was crazy good and some equally tasty green beans in a seasoned vinegar and shallot dressing. Had to have seconds! 🥰

My mom called it American chop suey and didn’t ever add corn to it. Chuckwagon Mac is as good a name as any. I’d change the cheese from Parmesan to cheddar and leave out the oregano though.
 
Young fisherman is now selling day boat scallops at the farm just thru the woods. Yesterday made scampi and a trial of ceviche. Cheated with the pico de gallo. Good news is snowstorm and he was pushing a sale. I will be back. For snacking during the game

Mmmmm I love me some birria. It's just DH and me around here and we opted for hot wings with chile lime sauce and veggies with bleu cheese dip, which I just finished making. The wings are all cooked and sauced and I'll throw them in the air fryer when it's time to eat. Easy peasy.

Dude, that ceviche looks killer good and lucky you to get fresh scallops! Hard to find in AZ.... ;)
