What a difference a week makes

Brewed my hefeweizen and after nearly 2.5 weeks in primary I tested the gravity and of course sampled it. Wooo it was... hot with alchohol flavour. Not horrible, but not super pleasant.

Left it for a week in primary and tested gravity & tasted it again.

Wow! Night and day difference. This is superb.

I read John Palmer's How To Brew and the first edition is online for FREE! http://www.howtobrew.com/

Check it out, some of the information is outdated but again it's FREE! If you want the up to date info, I'd suggest purchasing the most recent version of his book and reading up on this very forum. The wealth of knowledge here is amazing!
