I'd like to do Jamil's Weizenbock recipe and it calls for 10 pounds of dark wheat malt. Well, I have a 50# sack of regular Wheat malt sitting here, and I'd rather use that than spend the $20 on 10 pounds of dark wheat malt. Any ideas on how I might be able to adapt this grain bill for the use of regular wheat malt? I've seen some discussion about adding a couple of ounces of midnight wheat, which I do have on hand as well....

5# pilsener
10# dark wheat
2# munich
.5 special B
.5 Crystal 40L
.25 Pale Chocolate

Maybe try replacing the pilsner with more munich. It'll give you a little bit more color and malty richness, but you still won't get the crackery flavor of the dark wheat.

My suggestion would be to add the midnight wheat. I wouldn't even crush it, just throw a couple ounces in whole, and you'll get color without extracting that roasty flavor I sometimes percieve from midnight.
