I am interested, after discussion with a more experienced home brewer, in using my local city water to brew rather than the filtered water I have been buying from the grocery store. I recently acquired and reviewed the water profile from my local water treatment plant, and noticed a high level of Nitrosodimethylamine. (9.4 ppt, parts per trillion). I am not sure that this is high, but it lists it as the top of the range of measurements for this particular byproduct.
Two questions...
1) Is this a high level of NDMA?
2) I was reading that this, obviously, effects beer in a negative fashion. If this is too high, what can I do about it?
Is there a good water profile out there that I can compare mine to?
