Any reason I can't use something like this? Do I REALLY need to send the water out etc. I'm asking because I have 3 water sources I'm trying. 2 springs (in 2 different locations) and my tap water which is well with a water softener. I've been using my water at home with the softener and I gotta tell you I'm not really excited. My stout came out great but then I did the Bee Cave brewery Haus pale ale and it does have an off taste, and I know it's gotta be the water. FYI its was my first AG; and 3rd batch all together.

That tells you very little of what you need for brewing. You really need to know the levels of...

Calcium
Magnesium
Chloride
Sulfate
Sodium
Bicarbonate/Alkalinity

Try ward labs posted above.
