I washed us-05 2 days ago and fridged 5 pint jars. I had a gallon of washed yeast in suspension before siphoning off the 5 jars. I planned to dump the remaining yeast (once settled) into a fresh batch but wasn't able to brew until today.

So I have a starile gallon jug with about .5 inch yeast cake and 3 pints of h2o. my question is can i just decant, resuspend in a little sterile water and pitch? it has not been refrigerated but had remained airtight, and in the low 60'sF.

I don't have the time to make a starter but think the cell count should be more then enough...

thoughts?

thanks

has anyone pitched washed yeast that sat at room temp before? should be about 4x the cells in a pint of washed yeast??
