I'm looking for a proven recipe for a Duvel extract (purchased kit or pieced together from my LHBS)

from what i understand, duvel is made from 100% pilsner grains, so you could do some with grains and some with pilsner DME.

2 lbs of sugar for a 5 gallon batch outta do it...and light AA noble hops: styrian goldings, saaz, tettnanger...something like that.

i love the idea of belgian minimash batches because you can do it in stages, which causes less stress to the yeast, giving better flavors and higher attenuation.

do a mash + extract at one stage and put about 3 gallons into the fermenter. do the rest of the extract after a few days and add that to make 4 gallons, add the last gallons with the sugar after another couple of days.

i think it ferments faster, too.
