Ok, I want to try my hand at a Gluten free Belgian. I have 1oz of Sweet orange peel and 1oz of Coriander. A half of sweet orange peel and a half of the coriander with 5 minutes left in boil. And the other 2 halves in secondary. My question is this a good method? Also, I want to hop with 2oz Saaz hops. 1oz 60 minutes and 1oz 10 minutes left in boil. The IBU's are just under 10, this isn't too low IBU's for this type of beer is it? If not, I am open to any and all suggestions.:fro:
 
10 IBU is at the very low end for the style. I'd personally bump it up to at least 15 (higher if your OG is on the higher end). I personally just toss all the spices in near the end of the boil so I don't have to worry about sanitizing them
