2 oz Belma & 2 oz Equanot at FO (20 min)
Dry Hopped 3 oz Belma & 2 oz Equanot on day 21 of fermentation.

Fermented with Bootleg's Funk Weapon #2 at 75 F for 30 days.


Kegged. Tastes great!! Ripe Fruit, and bright hops character. Brett funk is there. This yeast makes an excellent beer. The Brett doesn't make this "juicy", or anything that tastes like a NEIPA at the end- Just a really different and interesting beer. Planning on brewing another one up shortly...

What water profile did you use? Just made a Brett NEIPA with FW2. Used Citra, Amarillo and Galaxy. Still fermenting now.

On this I just used local Vancouver WA water treated with Campden. I
I used a pitching rate right in between ale and lager.
How long has yours been going?
 
I used pitched a pack of FW2 and then a 2L starter. The starter only had about 5 days on a stir plate and it was still going, so no real idea of how many cells the starter made. It has been going since Monday. I also used a very NEIPA ish water profile. 350ppm Chloride and 100ppm Sulfate. I knew the Brett would dry this out so I mashed fairly high. Not sure if either will help keep a creamy mouthfeel with Brett but I tried
