Using Pummelo peel??

I have a pummelo in my fridge and I was going to keep the peel when I eat it, but I wasn't sure if I should dry it or freeze it fresh, because I might not brew for a few weeks. I would think fresher is better, but not sure about affects of freezing. Is one pummelo enough to change any characteristics or would I be wasting my efforts? I was thinking of doing a summer wheat beer with pummelo in the last 5 minutes of boil and using centenniel and amarillo hops.

Uh...I dunno...I guess you'd use the peel like you would any other citrus fruit in a beer? Maybe?
