I just brewed an american barleywine today, and am planning on aging it on light french toasted oak cubes, and vanilla beans.

When I do rack to secondary, how do you go about adding the oak? Is it just put it in the secondary and let them float around on the beer until they sink on their own (if they ever do sink), or should I put them in a hop bag and weight them down with marbles or something?

It's likely going to sit on these cubes for about 5-6 months, and I'm going to use about 2oz of them I think.

Any comments are greatly appreciated! :)

Sitting that long, I would definitely sink them. I put them in a go sack and load them with sanitized marbles.

When I presoaked my cubes with bourbon (making a porter), they sank immediately for the most part. It's the oak chips that tend to float and never sink.
