Using induction cooktop for e-BIAB

Greetings-- apologies in advance if this has been covered before but I am hoping someone may have had experience with tweaking an induction cooktop to allow it to be used to keep temperature constant for a BIAB setup.

I am starting to brew 3-5 gallon BIAB batches and hoping to tweak an induction cooktop so that it will cycle on / off based on brew temperature reading. I would like to use a temperature probe in the mash to do so. The limited reading I've done indicates that cheap induction units can be hacked to allow manual control to them.

Pros:
* if it works, its a very easy way to control mashing temperature
* relatively simple

Cons:
* heating area on many induction cooktops are relatively narrow; may cause hot-spots.

Anyone tried using an induction cooktop with temperature probe before to regulate BIAB brew temperature before?
