Use Extract Without Boiling

Ummm...I suppose but what is your goal?

Malt extract is for makign beer, not hard cider. if you add LME or DME to cider, it won't be cider anymore...but some kind of fusion of cider and beer.

it may taste great...it may taste like donkey taint.

So, why are you thinking of trying this? And if you do, I would boil the extract for 10 minutes to make it sanitary. No need to go the full hour.
 
I've made apple ales with light DME. Came out great. I do a 10 minute boil on the DME in minimal water (1/2 gal or so), cool and mix in the juice.
 
Adding a pound of ultra light malt extract or two to a 5 gallon batch will make a malt beverage like Mike's hard lemonade. It'll contribute to the mouth feel
 
ok, I'm in for a go of this....here is my 1 gallon batch:

8 oz DME (from my starter stash)
1 gallon of Apple Juice (From my Apfelwein Stash)
1/2 Cinnamon stick
1 clove Smashed.

I'll boil the DME and enough apple juice to get it dissolved, then all in the fermentor with the rest of the juice and spices. I'll use whatever yeast is in the fridge...maybe notty, or some washed US-05.
