Recently, my beer has been in the cold crash phase for 6 days (I'm planning to leave it for 10 days). I tasted a sample, and it has an unusual eggplant-like flavor, along with a bitterness that doesn't seem characteristic of the hops.
Can anyone offer some advice on what's going on and how I should proceed?
