Unusual Eggplant Flavor and Bitterness During Cold Crash – Need Advice

Hello everyone,

Recently, my beer has been in the cold crash phase for 6 days (I'm planning to leave it for 10 days). I tasted a sample, and it has an unusual eggplant-like flavor, along with a bitterness that doesn't seem characteristic of the hops.

Can anyone offer some advice on what's going on and how I should proceed?

Proceed as is normal.

It's only after the beer is bottled/kegged and conditioned that you should judge whether it's a dumper or not.
