what actually unmalted grains are contributing in the final product. I had couple of commercial beers that were made with some unmalted grains (it was written on the label).

What if I add unmalted wheat or barley to my mash (do I have to mash it at all?)...

flavors, colors, aromas?
 
The base malt in the mash will convert the unmalted grains. You will get components from the type of grain you use. Corn and rice will boost gravity and add some subtle grain notes. Barley, oat, rye, and wheat will add head retention and each will give its own unique flavor contribution.

You do have to mash the grain or you will not be utilizing the starches and the starch will end up in your finished beer.
