Looks a lot like what I have planned as well. But, I'm using a 62qt Bayou Classic pot with strainer basket, larger pump, and likely bigger heating element (5500W). I should be able to do up to about 11 gal batches of moderate gravity (if I add a sparge step), and 5.5 gal batches of any gravity with no sparge.

I should have put on my site the actual pot size. It is a 6 gallon pot that I'm using for the 3 gallon batches. Able to brew 5 Gallons, it just adds to your brew day time. I'm going to brew a 5 gallon batch with it and get back to how long the brew day is.
