I have a theory on why they are under carbonated but here are the details. Brewed a Sweet Stout bottled it for 2.3 volumes of C02 using 3.75 oz of corn sugar. The beer was at 71ºF. The basement was at 78 and it was near 100ºF for 3 weeks straight outside so I'm sure the basement hit over 80 at some point. I bottled it for the 71º I'm assuming since it was hotter in the room the bottles heated up to room temperature and the beer couldn't reach the correct volumes of C02 at that temp without needing more sugar. So is my theory close or is something else to blame.
