OK so my carboy is only 5 gallons, and I would like to make a 5 gallon batch. I have been reading on some guy's blog about how he only does about 4.25 gallons and then lets it ferment until the foam settles down, and then adds about a half gallon of water to bring it up to almost 5 gallons. Is this OK to do? Thanks

yea it will work. just make sure you boil then cool the water first to sanitize. i wouldn't be to worried about watering down your beer. if the recipe was for 5 gallons making 4.25 gallons would result in a higher gravity than the recipe is expecting. so adding the last .75 gallons should dilute it back down to what is expected.
