I've read a few references that say if you are able, it's good to fill the secondary with CO2 prior to racking, or at least to top off the head space with CO2. Does anyone here do that, or is it just making extra work for yourself?
If you're careful that isn't necessary. CO2 comes out of solution and covers the brew. Of course, I rack from the fermenter to the keg and always pressure test, so the keg is full of CO2.
