My buddy and I have been brewing for about a year now and the last few batches have come out extra carbonated. If poured into a glass and allowed to sit for a while the beer is fine.
We recycle our yeast but everything else is the same as before this problem.

You may be bottling before the yeast have finished their work. The priming sugar re-invigorates them and they overcarb your bottles. Otherwise, it could be a sanitation issue.

+1 to daskin. Make sure that fermentation is finished prior to bottling. Take a few gravity samples and make sure that it is stable. If that's not it, cut back on your priming sugar. 5 oz to 5 gallons is my rule, but if your finding its too much for your beer cut it back to 4.75 or 4.5 oz per 5 gal. Also, wheat beers will tend to produce a ton of head, so that could also be it. Where they wheats?
