In making the Rogue Hazelnut Brown Clone it looks like I added way too much Hazelnut extract. In the recipe it says to add 1/8 oz of Stearns and Lehman Flavoring - but that isn't made anymore.

My homebrew store sells BREWCRAFT hazelnut flavoring and the instructions say to add 2oz to 5 gallons. I figured the Stearns and Lehman was more potent than the brewcraft so I added the 2 oz to my secondary and let it sit for a week. I let it sit in the keg for a week to get carbonating and pulled a couple of samples - and the hazelnut is overpowering to the point where it is not really drinkable.

What are my options? The beer did come out a little strong - can I add water?

Does the hazelnut flavoring mellow overtime?

Any and all advise to help me save this beer would be helpful!

Thanks

I used the same stuff in a stout, but I only used half and it's still too overpowering for me to drink. The beer is 6 months old and it hasn't mellowed at all. I now use it for baking cookies, cakes, etc. It was only a half batch of beer luckily. Lesson learned!
