Today I had in mind a DunkelWiezien. My mind was changed for me, and I ended up get a Kolsh kit. Here is the recipe.

12oz Cruched Carapils Malt
3#8oz Pilsen Light DME
1# Wheat DME
1oz Vanguard Bittering hops @ 55 min 4.4AA
1oz Sazz Finishing Hops @ 5 min 2.9AA
WLP029 - German Ale Kolsh Yeast.
Suggested SG of 1.044 - 1.050
Suggested FG of 1.007 - 1.009
ABV 4.35% - 5.25%
Hop IBU's 20 - 30



Here I am adding the steeping graing in. I steeped @ 155 for 30 min. Notice my gheto hanger for the grain bag. I did this because last time the bag got snagged up on my screen in the bottem of the boil poy. What a pain in the arse that was to get back off.



Here the steeping is complete, and now I am raising the temp up to boiling.



Now all the DME has been added. I have not used all DME in one batch before. Usually it has beem a combination of LME and DME. This was very hard to control the boil over, but I faired out OK.

I added in the aroma hops with five min left in the boil, then chilled down the wort to 75*.



While the wort was chilling I added 2 gallons of cold water to the primary. I then poured the wort into the primary and topped it off to just over 5 gallons. I sturred for a straight five min to arrate the wort and piched the yeast.



My SG came in a bit lower than what I thought it would. I was about 1.038 - 1.040. I figured it would be 1.040+.



Overall the hydro sample does not taste to bad. Its a little sweet, but I imagine that will change after fermintation is complete.

Sweet. I just made a Kolsch kit this past Tuesday. I used that same yeast...it fermented like crazy (as in three bubbles a second out of the blow-off tube) for a day, and then nothing. Be sure to post up how yours does.

I just check the air lock this morning. So far nothing but its only been 12 hours or so. I use the s bend airlocks. The water is sort of mofing twards the top, so I can tell that the re is some pressure building up in there just no bubbling yet. What temp did you ferment at? My thermometer on the side is reading 68* so I think I am in the ball park.

Mine was a little warm probably, something like 73* on average. Mine didn't start bubbling until the day after, so I think if it's not going after 12 hours you'll be fine, give it another 12, it'll be going crazy.

I have a spare fridge in the garage. I do not have a temp controller for it though other than the built in one to operate the fridge. Would it be OK now that I have the brew in the secondary, to put this in the fridge to try to falf arse lager it? Would there be any advantage to this at all? I just moved to the secondary this morning.

Will a standard fridge work though? It is pretty cold, but I do not have a low reading thermometer to tell what it really is. Could I just stick it in there and be OK for three to four weeks?
