That is the question.

I have a Vienna Lager in primary for seven days. I am wondering if I should rack it to another fermenter to lager it. I know that leaving it on the trub can cause off flavors.

Wada ya think?

I've never racked a lager that early. If the lager needs a diacetyl rest, you can take the sg and when it's 75% done fermenting, do the diacetyl rest.

I usually leave it in primary for about two weeks at 50 degrees, and then taste for diacetyl. If there is no diacetyl, I rack to secondary and start the lagering process. Remember, you want the beer to be finished fermenting before you start lagering it.
