Made a pretty hoppy maibock yesterday on some new equipment and planned for poor efficiency just in case. Well, as a typical greedy homebrewer I just rolled with the higher extract and now I have a 1.080 maibock when I was planning for 1.070. I had plenty of yeast to make up for the extra gravity, but I'm wondering if I really want a 8+ percent ABV lager. Dilute back down to the target OG? I guess I could always complete fermentation and see how I feel.

65% pils
30% vienna
5% aromatic

145 strike, decoction to get to 155, no mashout

30IBUs @ 60min
.5oz/gal Saphir 5min
-used chiller to get down to 170, then whirlpooled for 15min before continuing to chill

Pitched @ 46, plan to keep it around 50 until it slows and then begin raising.

You could but you'll dilute the flavors/aroma as well, however if you dilute it before pitching it could help the yeast follow with a healthier fermentation.
