the goal is to brew a beer for the missus that is sweet and malty. she's a good sport and puts up with my hoppy and/or sour brews, but every now and then i gotta serve up a malt bomb to keep her happy. my starting point was my english barleywine recipe, but then i took a left:

Mash: 154*F for 60 minutes
OG: 1.084
IBU: 36.5
Color: 19.5 SRM
Yeast: S-04 English Ale dry yeast (2 packs)
i expect the FG to be in the low 1.020's, for an ABV in the 8-9% range. i will throw in a half-ounce of oak cubes so that the beer acquires a bit of wood character while it ages/conditions for a few weeks.
i was contemplating adding some molasses, but i think there is enough going on without 'em.
