Hey Guys,

First time poster here and longtime searcher on the forum.

I would like to get some feedback on a recipe for a Pumpkin beer. I've brewed a pumpkin in the past and terribly over cinnamoned the design. This is for 5 gallon extract batch with specialty grains.

4 lb canned pumpkin, roasted 350 degrees for 60min - steeped with grains

6.6 lb Light LME
1 lb 2-Row
1 lb Crystal 60 - steep 152 degrees 60 min
1 lb Victory - steep 152 degrees 60 min
1 lb brown sugar

1 oz Fuggle - 60min
1 oz Fuggle - 15 min

1 tsp McCormick Pumpkin Pie Spice - 15 min

Vanilla Bean - Secondary 1 week

Yeast - Safale US-05

Any feedback is appreciated

Thanks

I wouldn't use that much Victory without mashing. It contains quite a bit of starch that won't convert. There's also starch in the pumpkin. Also, I don't really like vanilla with my pumpkin flavors. Using whole spices is also better, Radical Brewing (Mosher) has some great advice on this subject.
