I am new to all-grain brewing and just setup my new DIY 1-tier brewing system. I purchase 3 10 gallon kettles online from HighlandBrewingSupply.com. The thermometers are in a location where they will not be submerged unless there is more than 5 gallons in the kettle. Are the thermometers useless or do I need to calibrate them so that they measure the air temp? What are my options? I was trying to find an angled thermowell that can replace these so that they bend down into the wort etc with no luck. Also any recommendations on upgrading to a digital thermometer system? I do not want to go fully automatic I just want an accurate reading without using my Thermapen.

Thanks,
Chris
