OK, I've searched, and only found results for Beer.
I've bottled my hopefully sparkling wine, and it's sitting on it's side in a 60-61* basement, in the dark, in a box.
Is this too cold to get it going? Red Star Premier Cuvee starter with proper amount of sugar added, capped in champagne bottles. I have a pop bottle full of the mix - and it's not firming up at all.... :(
Ideas?

Premier Cuvee has a pretty wide temperature range. It will probably carb up at 60 degrees, it just might take a while, especially if the ABV is high. Try warming it up to ~70 degrees. In either case, it may take a good month or more to get the carb level you are looking for.
