I've never had the commercial version and have the NB clone in primary at the moment. I'm hitting FG at 1019 and finding quite a bit of residual sweetness currently. Is this present in the commercial version? Any descriptions in malt character are appreciated given I cant sample the real thing!
 
Thanks Yooper - that's what I thought. I have no idea where my process failed on this beer but I'm stuck at the moment at 1019. Big starter, oxygen, and controlled fermentation temps - very frustrated.... This was my first water build and followed AJ's water primer exactly - it's the only thing that sticks out to me as something different and wondering if I'm missing some key 'minerals' for the yeast somehow. 5g CaCO3 & 5g CaCL2 with 2% acidulated malt with distilled water.
