Suggestions on High gravity wheat beer with limited ingredients?

I want to make a wheat beer with coriander and orange peel thats between 6.5-8% ABV.

I Live in south america and have limited access to ingredients, but I do have a nice Electric Herms!

I am brewing tomorrow afternoon, and need help on ingredient selection I already have the malted wheat, but aside from that, this is what I have access to:

For a standard pale weizen/wheat beer, 50%/50% to 60%/40% wheat and pilsen malt would be a good bet, with 1 to 2 oz of Tettnang/Hallertau for 60 mins in the boil. I'm taking this from http://www.theelectricbrewery.com/forum/viewtopic.php?t=25428 and from http://www.beersmith.com/Recipes2/recipe_82.htm

To hit about 6.5% in a 6 gal batch, you'd need to up the malt to about 12 lb/5.5kg total. That's a bit high and out of style for a weizen, but might be good.

For the upper end of your range, you could aim at a weizenbock e.g. the Brewing Classic Styles recipe which comes in at 8% http://www.homebrewersassociation.org/homebrew-recipe/beer-recipe-of-the-week-weizenbock/

2.25 kg Pilsen Malt
4.5 kg Dark Wheat if you have it, or 4.5 kg Wheat Malt and replace some of the Pilsen or wheat malt with chocolate or caramel malt to hit your desired color - maybe half a pound of chocolate or pound of caramel depending on the color. The original uses
1.5 oz of Tettnang or Hallertau (or a mixture) for 60 minutes.


BrewMaster wheat beer yeast for either recipe.
