Have a Shiner Clone all grain kit . How would it turn out if I use Saf 04 instead of WLP029 ?

Is that for your Kölsch beer?
WLP029 should be fermented at somewhat lower temps (~63-65F) than S-04 (~68-70F), and has a pretty clean, lager like character. S-04 is a British yeast, accentuating malt flavor and brings out estery flavors. It won't make something you'd call a Kölsch, but it will make good beer.
