My friend and I recently brewed a nut brown ale and used 1 oz of Premiant (divided into three additions at 60, 45, 30). The brew store is out now and we are brewing a second batch. This one will have maple and pecan in it. Any suggestions on what hop should replace Premiant? Thanks.

Brown ales are always good with Goldings or Fuggles in them. Spalt Select is very low-AA, that could work well. Otherwise, .75oz Glacier for bittering and .25oz Glacier could work well - it's like a slightly higher AA Goldings or Fuggles, so I'm told.

My Spalt Select/Glacier brown ale is in primary, otherwise I'd tell ya firsthand how it tastes.
