I have 5 gallons of a (big) Maibock (1.084). I did a 10 gallon batch and partigyled, 5 gallons of 1.084 and 5 gallons of 1.056. Meant to have a Maibock and Helles but it's more like a Dopplebock and Maibock. Anyway...
Without going into what happened, 1.084 beer was chugging away but my temp in my ferm chamber dropped to about 40. Using Wyeast Munich Lager (WY2308). Looks like it went to sleep as the airlock activity ceased and I don't even see any airlock pressure. Haven't checked SG, this has been fermenting for only 7 days. I know it's too early to panic but i'm pretty sure the yeast has gone to sleep. I did gently swirl the fermenter and there is still a decent thick layer of krausen, but noting moving inside (i can see, clear fermenter) and not pressure/activity in airlock.
What would you do at this point? get a new starter (BIG) going and get ready to rack over to new yeast?
