  • Soak all equipment in a 1:1 solution of undiluted ammonia and bleach. DO NOT RINSE.
  • Combine 6.6lb of malt extract with 2 gallons of water. Simmer gently for no more than 10 minutes. Add ¾ cup Irish moss and finishing hops during the last minute.
  • Meanwhile, bring 3 gallons of tap water to a boil and quickly funnel directly into glass fermenter.
  • Add wort to fermenter and allow the wort to cool slowly over a period of 72 hours.
  • Prepare yeast by sprinkling packet on top of 4 oz. water. Let sit 10 minutes, then boil yeast slurry vigorously for 60 minutes for ale yeast, 90 minutes for lager yeast.
  • Combine yeast slurry and wort in fermenter, affix air lock, and place under a fluorescent light for 2 weeks.
  • Bottle, wait 10 days, then stop relaxing, start worrying, and by all means, don’t have a homebrew!
