Hey everyone. Thinking of trying a strawberry balsamic mead next. Anybody tried this yet? Or have any recommendations for ingredient quantities? I'll most likely be making 1 gallon batches to test it out.

Since no one has commented, I figure I will ask. Are you thinking something along the line of a strawberry balsamic martini? I am just curious because that just uses balsamic vinegar added to a mix of other ingredients. I have heard about a mead "going bad" and turning into a vinegar, so I guess you could intentionally do that, but I don't know if it would be something you would want to drink in much quantity. I guess I am just confused by what you are asking or wanting to make since I only know of balsamic as commonly being a vinegar.
 
Not too sure how to do it. That's why I figured I'd throw it out there to see if anyone else has tried. My wife had some strawberry balsamic gelato this summer that was amazing. It was her idea for our next flavor. My worry is that without the creamy background that the ice cream provided, the balsamic may just make it taste vinegary or off. Just wondering if maybe someone else had gotten creative and beat me to this idea? Could definitely be an epic fail, but never try, never know...
 
Perhaps you could try making a strawberry mead and use a little lactose to back sweeten once its finished fermenting. Its supposed to give a "creamy" texture, that might add something. Then take a small measured amount of mead and mix a much smaller amount of balsamic vinegar to it and see what it tastes like. This way if you come to the conclusion that the balsamic doesn't work in the recipe you haven't wasted a whole gallon or more of mead. That's just my thoughts on this though.
 
Keep in mind, if you add unpasteurized vinegar to your mead, you're very liable to create vinegar from your mead. I'm not sure with balsamic, but I'd double check before you try it. Of course, it's much simpler (and less risky) to just make a sweet strawberry mead and add balsamic to taste in your glass (basically making a mead cocktail). Or I guess you could try to boil it a bit beforehand.
